- 2 tbsp neutral oil
- 3/4 cup brown sugar
- 1 1/2 tbsp coffee powder, optional

Directions:
- Preheat oven to 350 degrees.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt.
- In a large bowl, mix together the applesauce, oil, brown sugar, coffee powder, vanilla and Ripple Chocolate Milk.
- Add the flour mixture to the wet ingredients and stir to combine.
- Line a baking sheet with parchment paper.
- Working in batches, place the batter onto the sheet in 1-2 inch circles giving room between each one for their size to double. (They will retain their shape while expanding so try to make them as circular as possible).
- Bake for 8-10 minutes.
- Remove from the oven and move to a cooling rack then continue the process until all batter has been used.
- To make the filling, cream the butter until soft, about 1 minute.
- Add powdered sugar, Ripple Original Milk, vanilla and food coloring.
- Whip until light and fluffy.
- Assemble cookie sandwiches by piping filling onto underside of one whoopie pie and topping with another. Repeat with remaining cookies.
- Add a dot of icing to the backs of the candy eyes and stick to the whoopie pie.
- Stick one end of the pretzel sticks in the orange cream filling.
