Vegan Blueberry Banana Muffins

Ingredients:
  • 1 1/2 cups AP flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 medium bananas
  • 1/3 cup neutral oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup Ripple Unsweetened Vanilla Milk
  • 1 cup blueberries, tossed in flour then flour discarded
Directions:
  1. Preheat oven to 375 degrees.
  2. Oil or line a 12 well muffin/cupcake pan and set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In another bowl, mash the bananas until only a few lumps remain then mix in the oil, maple syrup, vanilla extract and Ripple Unsweetened Vanilla Milk.
  5. Add wet ingredients to dry and mix to combine then gently stir in the blueberries.
  6. Fill the each well in the muffin pan about 3/4 of the way to the top.
  7. Bake 15-20 minutes or until golden brown and cooked through.
  8. Enjoy!
