Vegan Blueberry Banana Muffins
Makes: 12 servings.
Ingredients:
- 1 1/2 cups AP flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 medium bananas
- 1/3 cup neutral oil
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup Ripple Unsweetened Vanilla Milk
- 1 cup blueberries, tossed in flour then flour discarded
Directions:
- Preheat oven to 375 degrees.
- Oil or line a 12 well muffin/cupcake pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, mash the bananas until only a few lumps remain then mix in the oil, maple syrup, vanilla extract and Ripple Unsweetened Vanilla Milk.
- Add wet ingredients to dry and mix to combine then gently stir in the blueberries.
- Fill the each well in the muffin pan about 3/4 of the way to the top.
- Bake 15-20 minutes or until golden brown and cooked through.
