Vegan Apple Pie Milkshake

Ingredients:
- For the Apple Pie Filling:
- 3 Granny Smith apples, core removed and cut into 1-inch cubes
- 1/4 cup light brown sugar, packed
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- For the Milkshakes:
- 1/2 cup Apple Pie Filling, chilled
- 1 pint Ripple Vanilla Ice Cream
- 1 1/2 cups Ripple Vanilla Milk
- 2 tsp vanilla extract
Directions:
- In a large saucepan add the apples, brown sugar, lemon zest and juice, cinnamon, nutmeg, and ginger.
- Cook, stirring constantly until apples are very soft and begin to break down, about 15 minutes.
- Remove from heat and place in a blender.
- Process until smooth then transfer to an airtight container and place in the fridge until chilled (Note: this recipe yields enough apple pie filling for two batches of milkshakes).
- Add 1/2 cup of the chilled apple pie filling to a blender. Add ice cream, milk, and vanilla extract.
- Blend to desired consistency.
- Divide between two glasses and top with an extra scoop of ice cream and a drizzle of caramel; serve immediately.
