German Chocolate + Pumpkin Chia Pudding Parfait
Ingredients:
- German Chocolate Chia Pudding:
- 1/3 Cup Chia Seeds
- 1 Cup Chocolate Ripple
- 3 Tablespoons Unsweetened Coconut
- 1/2 Teaspoon Vanilla Extract
- Pumpkin Chia Pudding:
- 1/3 Cup Chia Seeds
- 1 Cup Unsweetened Original Ripple
- 1/2 Cup Pumpkin Puree
- 2 Teaspoons Pure Maple Syrup
- 1 Teaspoon Cinnamon
- 1⁄2 Teaspoon Nutmeg
- 1⁄2 Teaspoon Vanilla Extract
- Toppings (optional):
- Unsweetened Coconut
- Chocolate Chips
- Glazed Pecans
- Walnuts
Directions:
- In a small jar, combine all ingredients for chocolate chia pudding. Stir well. Repeat with pumpkin chia pudding ingredients in a separate jar. Refrigerate at least three hours (or overnight).
- To assemble, layer chocolate and pumpkin puddings in a small glass. Top with coconut, chocolate chips and nuts. Enjoy!
