Cranberry Orange Waffles
Yield: 4 servings
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/4 cup whole wheat flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1/4 teaspoon ground nutmeg
- 1/3 cup coconut oil, melted
- 1/4 cup turbinado sugar
- 1 1/4 cup Ripple Unsweetened Vanilla Milk
- 1/4 cup freshly squeezed orange juice
- 1 teaspoon vanilla extract
- 2 teaspoons orange zest
- 1 cup fresh cranberries, plus more for serving
- pure maple syrup, for serving
- coconut whipped cream, for serving
Directions:
- In a large mixing bowl whisk together the flours, baking powder, baking soda, salt & nutmeg until blended.
- In a separate mixing bowl, whisk together the coconut oil, sugar, milk, orange juice, orange zest & vanilla extract.
- Add the liquid mixture to the dry mixture. Whisk until batter comes together, do not over mix.
- Fold in cranberries.
- Grease a preheated waffle iron. Spoon batter onto the waffle iron & cook until golden brown, about 2 minutes.
- Top with fresh cranberries, maple syrup, coconut whipped cream & serve!
