Blackberry Pancakes

Perfect for brunch, or when your sweet tooth kicks in. Blackberries pair really nicely with nutmeg and cinnamon spices, but feel free to use any berries of choice, or omit them completely!

Ingredients:
  • 1 cup flour
  • 1 cup Ripple original or vanilla
  • 1 tablespoons sugar or sweetener of choice
  • 2 tablespoons of baking powder
  • 2 tablespoons of oil or substitute with applesauce
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger (optional)
  • pinch of sea salt
  • 1 cup blackberries
  • 1 teaspoon sugar or sweetener of choice
Directions:

Whisk together all ingredients in a bowl. Pour batter into a pan on medium heat, and flip when bubbles begin to form at the surface. Heat on the other side for another minute or so until golden brown and slightly crisp. Heat blackberries in a pan on medium high heat with sugar for about 2-3 minutes until it becomes saucy and berries are slightly wilted. If necessary, add a teaspoon of Ripple to the berry mixture to help create a sauce more quickly. Top pancakes with blackberry sauce and enjoy!
