Banana Bread

Ingredients:
  • 3 very ripe bananas (mashed up)
  • 2 eggs (or substitute)
  • 1 and 3/4 cup flour
  • 1/2 cup white sugar
  • 1/2 cup vegetable oil
  • 1/2 cup Ripple Original Milk
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • For streusel topping (if desired):
  • 2 tbsp flour
  • 1 tbsp white sugar
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1 tbsp Earth Balance Natural Shortening (cold)
Directions:
  1. Preheat oven to 325 degrees.
  2. Grease a loaf pan, or line one with parchment paper and lightly spray with cooking spray. Set aside.
  3. In a large bowl combine bananas, eggs, sugar, oil, milk and vanilla extract.
  4. Once well-combined, add in your flour, baking soda. Mix for 2-3 min. until everything is well-incorporated. Set aside.
  5. In a separate (small) bowl combine flour, sugar, brown sugar and cinnamon. Then crumble in your shortening and work into mixture until “sandy” in texture. Set aside.
  6. Pour your large bowl of mixture into your prepared loaf pan. Then, crumble the streusel topping over the batter.
  7. Bake at 325 degrees for approximately 1 hour – 1 hour and 20 min. or until toothpick inserted in the middle comes out clean.
  8. Slice and serve!
