Banana Bread

Ingredients:
- 3 very ripe bananas (mashed up)
- 2 eggs (or substitute)
- 1 and 3/4 cup flour
- 1/2 cup white sugar
- 1/2 cup vegetable oil
- 1/2 cup Ripple Original Milk
- 1 tsp baking soda
- 1 tsp vanilla extract
- For streusel topping (if desired):
- 2 tbsp flour
- 1 tbsp white sugar
- 1 tbsp brown sugar
- 1/2 tsp ground cinnamon
- 1 tbsp Earth Balance Natural Shortening (cold)
Directions:
- Preheat oven to 325 degrees.
- Grease a loaf pan, or line one with parchment paper and lightly spray with cooking spray. Set aside.
- In a large bowl combine bananas, eggs, sugar, oil, milk and vanilla extract.
- Once well-combined, add in your flour, baking soda. Mix for 2-3 min. until everything is well-incorporated. Set aside.
- In a separate (small) bowl combine flour, sugar, brown sugar and cinnamon. Then crumble in your shortening and work into mixture until “sandy” in texture. Set aside.
- Pour your large bowl of mixture into your prepared loaf pan. Then, crumble the streusel topping over the batter.
- Bake at 325 degrees for approximately 1 hour – 1 hour and 20 min. or until toothpick inserted in the middle comes out clean.
- Slice and serve!
